It\u2019s great to take advantage of the season in the best possible ways \u2014 I know fall vegetables are coming in season but you can still get green vegetables which I think brighten up a dish \u2013 think green peas and asparagus.<!--more--><\/p>\n<p>In the dish below, leek pare well with green vegetables like spinach, peas and I always like to add asparagus for a tart note.\u00a0 The meat balances the vegetable sweetness so it ends up being a well rounded dish.<\/p>\n<p><strong>Pasta Casserole with Green vegetables<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>2 tsp olive oil<\/p>\n<p>2-3 large leeks, washed<\/p>\n<p>1 large garlic clove finely chopped<\/p>\n<p>5 packed cups baby spinach<\/p>\n<p>1\/ \u00bd cups baby peas<\/p>\n<p>1 cup chopped asparagus<\/p>\n<p>12 oz small pasta such as penne, farfalle etc.<\/p>\n<p>1 lb sausage or other meat like chicken<\/p>\n<p>2 oz parmesian cheese<\/p>\n<p>1\/3 cup basil, chopped<\/p>\n<p>Small wedges of tomato for garnish<\/p>\n<p>salt &amp; pepper to taste<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Preparation<\/strong><\/p>\n<p>Bring a large pot of salted water to a boil,<\/p>\n<p>Trim the leeks, cut in half lengthwise and rinse.<\/p>\n<p>Heat the oil, cook sausage or meat, breaking into small pieces, 5-7 minutes.
